What you will need:

  • 110g butter or margarine, softened at room temperature
  • 110g caster sugar
  • 2 free-range eggs, lightly beaten
  • 1 tsp. vanilla extract
  • 110g self-raising flour
  • 1-2 tbsps. Milk
  • 140g butter, softened
  • 280g icing sugar
  • 1-2 tbsps. milk
  • a few drops food colouring


How to make it:


  1. Begin by preheating the oven to 180°C/ Gas Mark 4 and line a muffin tin with paper cases.
  2. Cream the sugar and butter together in a bowl and beat in the  eggs a little at a time, while stirring in the vanilla extract; the kids  can help you do this.
  3. Fold in the flour, adding a little milk.
  4. Spoon the mixture into the paper cases until they are half full. Bake for 15 minutes. 
  5. Allow to cool for 10 minutes while you make the buttercream icing. 
  6. Get the kids to help you beat the butter in a large bowl until  it’s soft, while you add half the icing sugar and beat until smooth.
  7. Add the remaining icing sugar and one tablespoon of milk.
  8. Add the food colouring of your child’s choice and spoon the icing on the cupcakes.

What you will need:

  • 100g butter, softened 
  • 50g caster sugar 
  • 125g plain flour 


How to make it:
 

1. Preheat your oven to 180°C.

2. Cream the butter in a large mixing bowl (or food mixer) until soft.

3. Add the sugar and beat the mixture until light and fluffy.

4. Sift the flour and add to the mixture to form a dough.

Preparation time: 20 minutes 


What you will need:

  • 200g Dark chocolate (70% cocoa solids works best)
  • 2-3 tbsp. Golden syrup
  • 135g Butter or margarine
  • 100g mini marshmallows (chopped regular marshmallows work too)
  • 200g Digestive biscuits (rich tea can also be used) 
  • Icing sugar to dust
  • Raisins, dried cranberries or any dried fruit
  • Nuts


How to make it:


  1. Begin by lining a baking tray with baking paper.
  2. Get your little ones to place the biscuits into a freezer bag and bash them to small pieces. 
  3. In a saucepan, melt the butter (you should do this), chocolate  and golden syrup over a gentle heat. Be sure to remain stirring so it  remains lump-free.     
  4. Take all of your chosen ingredients – biscuits, marshmallows etc. – and stir into the chocolate mixture.
  5. Tip the mix into the baking tray and spread evenly.
  6. Put in the fridge for 2 hours and dust with icing sugar. Cut  into bite size chunks so the kids can enjoy the fruits of their labour.
